Lemon Zest & Parsley – Marinated Turkey Steaks
with Homemade Cranberry Sauce

Serves 10
Prep time: 1 hour + marinating time
Cook time: 15 minutes

Turkey Steak

  • 6 lbs boneless turkey breast
  • 1 tbs minced garlic
  • 1/2 c lemon juice
  • 2 tbs freshly chopped parsley
  • 1/2 tsp fresh thyme
  • 1 tsp sugar
  • 1/2 c olive oil

Directions:

Cut turkey crosswise in 8 oz steaks and pound slightly. Distribute remaining ingredients over and under steaks. Cover and marinate overnight.

Grill approximately 5 minutes per side.

Serve with cranberry sauce

Cranberry sauce

  • 5 c fresh or frozen cranberries
  • 1 1/2 – 2 c sugar – adjust for tartness to your liking
  • 1 c apricot jelly
  • 1 c orange juice

Combine all ingredients in a heavy gauge sauce pot. Bring to a boil for 10 – 20 minutes. Adjust sweetness or tartness with sugar.

Remove from heat. Serve warm or cold.

May store covered for up to 4 weeks in refrigerator.
