Plum Wine & Curry Roasted Chicken

Serves: 4
Prep time: 1 hour

Great for the rotisserie!

  • 1 whole chicken
  • 2 tbsp fresh garlic
  • 4 tbsp scallions
  • 1 tsp orange zest
  • 4 tsp curry
  • 1 tsp ginger powder
  • 1 tsp oregano
  • 2 tbsp curry powder
  • 4 tbsp rice wine vinegar
  • 4 tbsp honey
  • 2 tbsp oil
  • Plum wine, a sprinkle

Directions

Combine the ingredients above and rub under entire skin of chicken by making slits in the skin every 2 inches.

Marinate chicken for one hour or more (overnight is optimal).

Rub outside of chicken with ingredients listed below just before grilling.

  • 2 tbsp rice wine vinegar
  • 2 tbsp kosher salt
  • 1 tbsp oregano

Using your rotisserie grill attachment, grill the chicken 20 – 30 minutes per pound at 300-350 degrees. Test the internal temperature using a meat thermometer and take a reading in the center of the chicken breast and in the thigh.  When both read above 175 degrees F, it is time to take the chicken off the grill.

Quarter chicken and serve.
